
Martyn’s Egg Fried Rice

Using microwave rice shaves off loads of time with this dish! It’s really versatile too as you can add any meat or veggies such as cooked chicken, prawns or broccoli to the mix before adding the eggs and soy sauce and just heat through. We had fried Halloumi with ours!

- 2 Spring Onions
- 50g Frozen Peas
- 2 Eggs
- 1 pack microwave rice
- 1 Tbsp Soy Sauce
- 1 Tbsp Oil

Heat a frying pan or wok with a little oil, when hot add the eggs and cook them mixing them up until they are just cooked. Put them in a bowl to the side.



Add a little more oil to the pan and add the spring onions and peas and fry until the peas have defrosted.


Squeeze the rice to break it up in the pack an tip into the pan, fry this for around 10 minutes until the rice starts to brown and go a little crispy.


Add the eggs and soy sauce in and mix.
