
Fish Fingers and Chicken Nuggets

- 1 x Chicken Breast or 1 x Fish Fillet (any fish ok, but probably a less flaky one)
- 30g Cornflour or Plain Flour
- 2 x Eggs
- 50-75g Breadcrumbs (I used one large barm)
- 2 x Tbsp Veg Oil

Chop up the chicken or fish into small chunks, add the flour, eggs and breadcrumbs into 3 separate bowls.

With each piece of fish and chicken coat in flour first , then egg, then breadcrumbs, these can be separated to avoid mixing the meats.


Add 1 tbsp oil to a hot frying pan for the fish, and shallow fry until the breadcrumbs are golden on each side. The repeat for the chicken. Take out of the hot pan and place on a wire rack or some kitchen paper to cool.

Ensure meat is cooked through thoroughly before serving.
