This recipe is one for all the vegans, but you can easily substitute the fake meat for whatever lean meat, chicken or fish you like (as long as is its cooked to its own instructions) you might just want to fill this flavoursome dish full of veggies or swap out the rice noodles for boiled rice.

This super simple recipe works fantastically as a big hearty meal! The beauty of this that once you have done all your prep, it’s a case of tip, mix and leave until cooked.  In the half an hour it took to cook I managed to wash and dry my hair- multitasking at its finest!

This Chilli is my go-to mid-week meal as it is so versatile and comforting - you can add in different beans, lentils or veg, sometimes I use Quorn mince, sometimes I chuck in a handful of red lentils to bulk it out.
